1 tsp of cumin 1 tsp of mustard seeds 3-4 curry leaves 1 tsp red pepper few cloves of diced garlic 1 eggplant

this is an indian dish that is similar to baba ganouj but way tastier.

dice an eggplant. remove skin. put into a microwaveable bowl with less than a tbsp of oil. cover it, and heat for ~10 min +/- depending on your microwave.

in a seperate pan while thats heating,

get a 1tbsp of olive oil hot, and put in:

1 tsp of cumin 1 tsp of mustard seeds 3-4 curry leaves 1 tsp red pepper few cloves of diced garlic

mix this but DONT let it burn. if necessary do it on slow heat so that it doesnt.

now the eggplant is done. take it out, and mash the hell out of it.
you could use a potato masher if you have it or you can just use a shovel i mean spoon.

add around 10 tbsp of yogurt to this mash. add the spice mixture from the stove to it. mix it up, and salt it until it is to your liking. refrigerate it until cold.

before serving you can shred fresh cilantro over the top and dress it up.
