daicon kimchee

green onions - 3.49 6 cups chopped

daicon radish - $4.36 12 cups chopped

ginger - $.50 1 golf ball size piece

garlic - $.50 15 cloves

soy sauce - gluten free 2 tbsp

red chili flake powder - korean 2/3 cup

sea salt 2 tsp

turbinado raw cane sugar 1/3 cup + 2 tbsp

peel daicon chop roughly large bowl put salt in, massage mix salt evenly over all daicon

let daicon sit for 30 minutes or longer

julienne the green onions

prepare garlic: shuck, smash, minced

prepare ginger: peel, chopped, mince

place green onions and garlic and ginger into separate bowl and mix if desiered

drain the daicon juice into a sep bowl

mix everything together in one large bowl: daicon, green onions, ginger, garlic, cane sugar, red pepper flake powder, 3 tbsp radish water

put mix into kim chee fermenter, leave for 3 days on counter
