Create the Starter Culture
1/2 cup starter culture: 100g starter in jar feed with water and combo whole wheat or rye
jar should be pressure rated
we fed the starter, and we used the starter roughly 8 hours later to make dough during this time the starter ate the flour and water and got bigger
Mix the Dough
500 gram flour 1 tbsp salt mix slowly, add water slowly knead the dough roll into a ball drizzle some olive oil cover with press and seal, cover with towel
do this roughly at the time you feed the starter
Punch the Dough
Bread bowl on the scale 240g of starter measured out
splash of olive oil
knead and punch until looks like a kidney
splash olive oil and spread over dough
let sit covered for 30 minutes
Turn and fold the Dough 4 Times
Stretch vertically like taffy, fold over, turn 90 degrees
finish all turns, then let sit covered for 30 minutes
Brain-form the dough
Put dough into a brain-form bowl, cover, leave in fridge overnight
